Cornbread Madeleines



The ingredients are:
1 cup Yellow cornmeal, browned in oven 1/2 cup Flour 1 tsp Baking powder 1/2 tsp Baking soda 3/4 tsp Salt 4 tbsp Sugar 1 cup Buttermilk 1 Egg, beaten 2 tbsp Melted butter or margarine 1 medium Jalapeno pepper, seeded and chopped fine

In food processor, put 1/2 cup flour, baking powder, baking soda, salt, sugar and cooled cornmeal. Process until mixed, about 3-5 seconds. Add the buttermilk, egg and butter and process until smooth. Stir in the chopped pepper. Fill greased madeleine mould or tiny muffin tins 2/3 full of batter and bake for 15-20 minutes. Cool in pan, then remove. Origin: Appeal, Winter 1995.
